Who dislikes melted cheese? This creamy treat is a crowd-pleaser in fondue, grilled cheese, or breaded. The Tex-Mex-style smokey white queso dip we're making today will take around 10 minutes to create.
1 tablespoon butter1 small jalapeño, diced1 clove garlic, minced½ teaspoon smoked paprika½ teaspoon chili powder½ teaspoon kosher salt

2 tablespoons mezcal¼ cup canned fire-roasted green chiles, drained⅓ cup half-and-half½ pound white American cheese, cubed2 tablespoons sliced scallionTortilla chips, for serving

Over medium heat, butter should be melted in a medium-sized pot. Add the garlic, jalapeno, paprika, chili powder, and salt to the mixture.

Prepare for one minute, stirring the mixture occasionally. Mix in some mezcal. Cook, stirring, for around two minutes, until the mezcal has evaporated.

The green chilies, the half-and-half, and the cheese should be added. Cook for three to four minutes, stirring frequently, until the mixture is completely melted.

The queso should be poured into a serving bowl, onions should be used as a garnish, and tortilla chips should be present.
