Apple Brandy Pecan Cake

Ingredients 1/2 cup butter, softened 1 cup packed brown sugar 3 large eggs, room temperature 2 cups unsweetened applesauce

2 tablespoons apple brandy 3 cups all-purpose flour 1 teaspoon salt 1/2 teaspoon baking soda 1 teaspoon ground cinnamon

3/4 teaspoon ground allspice 1/4 teaspoon ground nutmeg 3 medium tart apples, peeled cored and chopped, about 3 cups 1 cup finely chopped pecans

Directions Preheat oven to 350°. Slightly grease a 13x9-inch pan. Blend butter and sugar in a large bowl for 3 minutes. Beat each egg carefully after adding it.

Beat applesauce and brandy. Mix flour, salt, baking soda, cinnamon, allspice, and nutmeg in separate dish; gradually add to butter mixture. Mix in apples and pecans.

Transfer to pan. Bake until a toothpick inserted in center comes out clean, 40-50 minutes. Cool fully. Add caramel if desired.
