I use leftover, extremely ripe bananas to make this delicious banana bread recipe quite frequently.
– ⅓ cup vegetable oil– ½ cup honey– 1 teaspoon vanilla extract– 2 egg– 1 cup mashed banana– 1 ¾ cups whole wheat flour– ½ teaspoon salt– 1 teaspoon baking soda– ¼ cup hot water– ½ cup chopped walnut

Put the oven on to 325 degrees Fahrenheit (165 degrees Celsius). Grease a loaf pan measuring 9 inches by 5 inches.

Beat together oil and honey in a large bowl. Continue mixing after adding the eggs. Mix with vanilla and bananas. Mix in the salt and flour.

Mix baking soda into boiling water and add to batter, stirring to combine. Stir in chopped nuts. Fill prepared pan with batter.

Bake for 55 to 60 minutes, or until a toothpick inserted in the center comes out clean. Before slicing, let cool on a wire rack for half an hour.
