Authentic French Onion Soup with caramelized onions, fresh herbs, and a flavorful broth. With gruyere cheese and toasted garlic french bread. You'll repeat this!
Ingredient
– 4 tbsp unsalted butter– 2-pound yellow onion– 1 tsp sugar– 1 tbsp all-purpose flour– 1/2 cup dry sherry– 3 cups beef broth– One tablespoon Worcestshire– 2 tsp chopped fresh thyme– salt and freshly ground pepper– 1 small French baguette– 8-ounce Gruyere

Melt butter in a large Dutch oven or heavy pot over medium-low heat. Sprinkle sugar over onions. Stir occasionally and cook until tender, golden, and caramelizing (20–25 minutes).

To coat the onions, sprinkle flour over them and stir them.

Add sherry, stock, Worcestshire sauce, and thyme and simmer. Cook partially covered for 30 minutes to blend flavors. Add salt and pepper to taste.

Set aside lightly toasted bread from the broiler. Put hot soup in six ovenproof bowls. Arrange bowls on a pan.

Toast 1 or 2 slices of bread and top each bowl of soup.

Sprinkle 1/2 cup grated cheese over bread in each bowl and broil until melted and crusty brown. Keep bread from burning. Serve now.
