Strawberry Cream Scones Recipe 

Perfect for breakfast or brunch, these Strawberry Scones are extremely soft and supple, and they're quite simple to make!

FOR THE SCONES: – 2 cups (250 grams) all-purpose flour , spooned & leveled – 1 tablespoon baking powder – 1/2 teaspoon salt – 1/3 cup (65 grams) granulated sugar – 6 tablespoons (85 grams) cold unsalted butter , cubed – 1/2 cup (120 ml) heavy whipping cream (plus extra for brushing on top of the scones) – 1 large egg – 1 teaspoon vanilla extract – 3/4 cup (115 grams) chopped strawberrie FOR THE GLAZE: – 1 cup (120 grams) powdered sugar – 1-2 tablespoons (15-30 ml) milk (any kind, use as needed) – 1 tablespoon (15 ml) heavy whipping cream – 1/2 teaspoon vanilla extract

Turn the oven on to 400°F. Put a silicone baking mat or parchment paper on a sizable baking sheet and set it aside.

Mix flour, baking powder, salt, and granulated sugar in a large bowl. Cut cubed cold butter into dry ingredients using a pastry cutter or fork to make pea-sized crumbs. Discard.

Mix heavy whipping cream, egg, and vanilla extract in a separate bowl. Add wet ingredients to dry and stir until crumbly. Mix in chopped strawberries gently.

Form dough ball on lightly floured surface. Touch the dough regardless of crumbliness or dryness. Make 1-inch dough rounds. Leave room between 8 equal pieces on the baking sheet.

Apply a little heavy whipping cream to each scone top. Bake till softly golden brown at 400°F for 20–25 minutes. Let cool after removing from oven.
