Best Italian Fig Cookie Recipe

DOUGH – ½ cup butter – ¼ cup granulated sugar – ¼ tsp. baking soda – 1 egg – 1 tsp. vanilla – 1-3/4 cups all purpose flour FIG FILLING – 1 cup dried and chopped fig – 1/2 cup finely chopped almond – 2/3 cup raisin – 1/4 cup chocolate chip – 1/2 cup orange juice – 1/2 cup Moscato – 1 teaspoon grated lemon – 1/4 cup honey – 2 Tablespoons orange marmalade – 1 teaspoon cinnamon LEMON GLAZE – 1 cup confectioners’ sugar – 2 tablespoons fresh lemon juice – rainbow nonpareil

Stand mixers should smooth butter (1 minute). Mix sugars and soda. Mix egg and vanilla. Reduce mixer speed and add flour. Wrap half the dough in plastic. Refrigerate until firm. While dough chills, make fig filling (see below).

Filling Remove and chop fig stems. Place figs and remaining filling ingredients in a food processor with a metal blade. Pulse to chop finely. You can use the filling this way or

5-7 minutes on medium-low heat in a medium skillet. Use a medium saucepan to mix filling. When the mixture seems dry, add a tablespoon of orange juice at a time until soft and thick.

Customize filling flavor. Add cinnamon for more spice. Increase honey for sweetness. Add chips if you want more chocolate. Cool to room temperature.

Firm dough Flour both sides of a dough piece between two plastic wrap (or parchment paper) sheets. Roll into 10x8-inch rectangle. Halve rectangles lengthwise. Place fig filling lengthwise down each strip centrally.

Fold one long dough side over the filling gently. Lift the other side over filling. Pinch the seam. Turn the log seam-side down. Cut carefully.

Place them seam-side down on parchment-lined baking sheets. Fill and slice remaining dough. Bake 10–12 minutes at 350 until lightly browned. Transfer pieces to wire racks to cool. Add lemon glaze and sprinkles.
