– ¾ pound bacon slices, chopped– 2 shallots, diced– 2 pounds collard greens, removed from stems and chopped– ¼ cup red wine vinegar– 1 cup chicken broth– 1 teaspoon salt– ½ teaspoon pepper
Direction
Spread the bacon out in a big pot and set it over medium-low heat.

Put the bacon in a separate bowl after removing it from the saucepan.

Cover and cook shallots and collard greens in the leftover bacon fat for 20 minutes until wilted.

The greens should be stirred, and then the vinegar, broth, salt, and pepper should be added.

Cook the mixture for a further twenty minutes while it is covered.

Continue to cook for ten more minutes after adding the bacon back into the pan.
