Chocolate Chip Cookie Cake Recipe

A soft, chewy cookie cake with chocolate chips inside and chocolate buttercream frosting on top. This Chocolate Chip Cookie Cake is a great dessert for any event.

INGREDIENTS 

FOR THE COOKIE CAKE: – 2 cups (250 grams) all-purpose flour, spooned & leveled – 1/2 teaspoon baking soda – 3/4 teaspoon salt – 3/4 cup (170 grams) unsalted butter softened – 3/4 cup (150 grams) light brown sugar – 1/4 cup (50 grams) granulated sugar – 1 large egg at room temperature – 1 large egg yolk at room temperature – 1 teaspoon pure vanilla extract – 1 cup (180 grams) semi-sweet chocolate chip

INGREDIENTS 

FOR THE CHOCOLATE BUTTERCREAM FROSTING: – 1/2 cup (115 grams) unsalted butter softened – 1 and 1/2 cups (180 grams) powdered sugar – 1/4 cup (21 grams) unsweetened cocoa powder – 1-2 tablespoons (15-30 ml) heavy cream or milk – 1/2 teaspoon pure vanilla extract – tiny pinch of salt

INSTRUCTIONS

Heat the oven to 350°F (177°C). Take a 9-inch springform pan and spray it with nonstick cooking spray. Mix flour, baking soda, and salt in a large bowl. Set aside.

Blend the butter, brown sugar, and granulated sugar in a stand mixer with the paddle attachment or a large bowl with a handheld mixer for 1–2 minutes. Add the egg, egg yolk, and vanilla extract and mix until combined, scraping bowl sides.

Mix dry ingredients just until combined. Add chocolate chips to the cookie dough and mix on low speed until fully incorporated. Place the cookie dough in the springform pan and spread evenly.

Bake from 22 to 28 minutes until the cookie cake top is set and lightly browned. To prevent cookie cake top browning, cover loosely with foil. Remove from oven and pan after cooling.

Beat butter in a stand mixer with the paddle attachment or a large bowl with a handheld mixer for 1–2 minutes until smooth. Combine powdered sugar ½ cup (60 g) at a time, mixing well after each addition.

Mix cocoa powder until fully combined, then add heavy whipping cream and vanilla extract and mix well, scraping bowl as needed. Remove the cooled cookie cake from the springform pan. Cover cookie cake edges with frosting.
