Cookie Dough– 3/4 cup 1 1/2 sticks unsalted butter– 3/4 cup granulated sugar– 2 large egg yolk– 1/2 teaspoon pure vanilla extract– 1/4 teaspoon kosher salt– 2 cups all-purpose flourLemon Glaze– 1 cup confectioners' sugar– 2 tablespoons fresh lemon juice– 1 teaspoon grated lemon zest

Beat butter and granulated sugar until fluffy with an electric mixer. Beat in egg yolks, vanilla, and salt. Mix in flour slowly until just combined.

Make 1 1/4-inch logs from half the dough. Wrap in wax paper and refrigerate 30 minutes to firm.

Preheat oven to 350°F. Slice the logs 3/8-inch thick and place them 1 1/2 inches apart on parchment-lined baking sheets. Bake until lightly golden, 16–20 minutes (my cookies took 14–15 minutes).
