– 2 Tablespoons extra-virgin olive oil– 1 medium onion– ½ pound sliced fresh mushroom– 1 pound ground turkey– 1 cup of pumpkin puree – ½ cup white wine – 1 sprig fresh rosemary– 1 cup reduced-sodium chicken broth– ¼ teaspoon freshly ground cinnamon– ¼ teaspoon nutmeg– 1 teaspoon sea salt– ¼ teaspoon freshly ground pepper– 1 pound rigatoni pasta

In a large skillet, heat 1 tablespoon of extra virgin olive oil over medium heat. Season onions with salt and pepper. Cook 3–4 minutes, stirring occasionally, until almost softened.

Add mushrooms: Stir mushrooms into onions for 4-5 minutes to soften. Place onions and mushrooms in a small bowl to avoid overcooking and mushiness.

Add ground turkey to the same skillet on medium heat with another tablespoon of extra virgin olive oil. Break it up with a wooden spoon (ground turkey takes 14-16 minutes, but cook it for 12 minutes until almost done). Moving on when it's slightly pink.

Add broth and white wine (or none if you don't drink). Alcohol evaporates while cooking). Now add fresh rosemary.Ground turkey finishes: Cook for 5 minutes. Turkey is finished with wine and broth.

While ground turkey cooks, boil pasta. Add salt to a large pot of water and boil for pasta. After it boils, add pasta and cook according to package directions until one minute before al dente.

Pumpkin puree, salt, freshly ground pepper, a dash of cinnamon, and ground nutmeg (I grated 1/2 teaspoon on top) should be added. Mix well and cook for 5-7 minutes.

After cooking the sauce, add mushrooms and onions. Stir and cook 1-2 minutes. Strain pasta one minute before al dente and reserve 1 cup of water. Pour pasta into the skillet with turkey/pumpkin sauce after colandering.

Put pasta water in thick sauces. Stir well over medium-high heat (1 minute). Get rid of rosemary. If desired, garnish pasta with rosemary and freshly ground black pepper. Stir in grated cheese and hot pepper flakes if dairy-free.
