Nut-Free Greek Yogurt Granola Bars Recipe

Everyone needs a few overnight breakfast recipes on days when a leisurely sit-down meal isn't possible. Overnight oats and chia puddings work well, but these nut-free Greek yogurt granola bars are unique. 

1 cup Medjool dates 1 ½ cups frozen mixed berries 2 tablespoons maple syrup 2 cups rolled oats 3 tablespoons ground flax seed 1 cup sunflower seed butter 1 teaspoon cinnamon 1 teaspoon vanilla 1 ½ cups sweetened vanilla Greek yogurt

Twenty minutes should be spent soaking the dates in hot water. In a pot of medium size, place the frozen berries and cook them over medium heat.

Stir in the maple syrup, then continue to cook over low heat for around ten minutes, or until the berries have thawed and become warm. Until it is ready to be used, remove from the heat.

After draining the dates, remove the pits from them. Put the dates that have been soaked into a food processor and pulse them until they form a paste.

Blend the oats, flax seed, sunflower seed butter, cinnamon, and vanilla extract together in the food processor until everything is thoroughly combined.

Transfer the mixture to a baking dish that has been lined with parchment paper and measures 9 by 12 inches, and press down firmly.

On top of the oat mixture, spread the yogurt in a thin layer. Place the berries in a number of different locations on top of the mixture of oats.

The baking dish should be covered and placed in the freezer for a period of two hours. Squares should be cut out and served.
